Favorite Summer Recipes



It is hotter than Hades right now where we live, and I really hate using my oven unless I absolutely have to. I try to get Mr. S. to grill as often as I can during the summer ... he actually loves doing it, so it is a win-win for both of us! Our staple meals tend to be steaks, pork loin and chicken. There are two side dishes that I make frequently in the hot summer months (besides the cole slaw recipes I have previously posted), so I thought I would share them with you today.

First up is something that my Mother has made for years and years, and it really isn't even a "recipe."  All you do is take 2 cans of sliced green beans, drain them and dump them in a bowl. Add some apple cider vinegar and vegetable or canola oil ... not a lot, just enough to cover the bottom of the bowl. (I never measure, I just eyeball it).  Season with salt and pepper, mix well, and let it sit in the fridge all day.  Couldn't be easier, and is very delicious... Mr. S. asks for it all the time.

The second recipe is one I re-invented from one of my Weight Watchers cookbooks. It is a Black Bean and Corn Salad. Here's what you'll need:

1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon ground cumin
2 tablespoons olive oil
1 teaspoon red wine vinegar
Salt and Pepper to taste
1 (15 1/4 oz.) can of corn, drained (for added color you could use the corn with red/green bell peppers in it)
1 (15 oz.) can of black beans, rinsed and drained

Combine all of the ingredients in a bowl; toss gently. Cover and chill.

I am a big fan of cilantro, and it really gives this dish such a great flavor. If you want to do the WW version of this, just omit the olive oil and red wine vinegar.

  2. I'm big on cilantro too...love it. I have a similar recipe to this that I use. It has lime juice, olive oil, apple cider vinegar, and a good amount of dried oregano instead of cumin. Black beans, corn, red bell pepper, and green onion. We love it.

  4. Mmmmmmm, love the sound of the green beans, will do maybe tomorrow. We are big cilantro fans and have made something similar to the other salad. Delicious and wonderful for these terribly hot days. Thanks for sharing.
